Author Guidelines
1. General Information
Jurnal Pengolahan Pangan publishes original research articles, review papers, and short communications related to food processing, food technology, food safety, food quality, and food product development. All manuscripts must be original, unpublished, and not under consideration for publication elsewhere.
Manuscripts should be written in clear English using academic language and submitted through the Online Journal System (OJS) of Jurnal Pengolahan Pangan. The editorial team reserves the right to edit manuscripts for clarity and style without changing the scientific meaning.
2. Manuscript Types

Original Research Article: Maximum 8,000 words, including tables and figures.

Review Article: Comprehensive and critical analysis of recent developments (maximum 10,000 words).

Short Communication: Brief report of new findings (maximum 3,000 words).
3. Manuscript Structure
All manuscripts must be typed using Times New Roman, 12 pt, 1.5 line spacing, on A4 paper size, with margins of 2.5 cm on all sides.
The structure should follow this format:

Title (concise and informative, maximum 15 words)

Author(s) Name(s) and Affiliation(s)

Corresponding Author (include email address)

Abstract (150–250 words, followed by 3–5 keywords)

Introduction

Background, problem statement, objectives, and relevance of the study.

Materials and Methods

Detailed description of materials, methods, and analysis procedures.

Results and Discussion

Present findings clearly, supported by tables and figures.

Conclusion

Concise summary of the main findings.

Acknowledgment (if any)

4. Tables and Figures
-
Tables and figures must be numbered consecutively (e.g., Table 1, Figure 1).

Each table/figure must include a clear title and source (if applicable).
-
Images should be in high resolution (minimum 300 dpi).
5. Citation and References
References must follow the APA (7th Edition) style.

Journal Article:
Rahman, A., & Sari, M. (2023). Effect of temperature on cassava starch modification. Journal of Food Science and Technology, 45(3), 210–218.

Book:
Fellows, P. J. (2017). Food Processing Technology: Principles and Practice (4th ed.). Woodhead Publishing.
The reference list should only include works cited in the manuscript.
6. Submission and Review Process
All manuscripts must be submitted via the OJS system. The journal implements a double-blind peer-review process. Each submission will be evaluated by at least two independent reviewers.
The editorial decision (accept, minor revision, major revision, or reject) will be communicated to the corresponding author through the OJS system.
7. Plagiarism Policy
All submissions will be checked using plagiarism detection software. Manuscripts containing more than 20% similarity (excluding references) will be rejected automatically.
8. Ethical Considerations
Authors must ensure:

The work is original and does not involve plagiarism.

Proper acknowledgment of all sources.

Ethical approval for studies involving humans or animals.
9. Article Processing Charge (APC)
Currently, Jurnal Pengolahan Pangan does not charge any submission or publication fees.
10. Copyright and Licensing
Authors retain the copyright of their articles.
All published papers are licensed under the Creative Commons Attribution 4.0 International (CC BY 4.0) license, allowing others to share and adapt the work with proper attribution.
